I have been running Zimbra at work now for last 4 years (approx).  Very nice.  Check out testzimbra.com for a demo of what it is like.
Version 6 should be released soon (RC1 now), so I would check out the test site and then try the open source edition for v6.
Yes, it is a little heavy on server hardware requirements vs squirrelmail.  Maybe an issue if you have older hardware and a lot of heavy users, ie 300+ emails/day

For a standard just webmail roundcube is your glossy shiny ajax equivalent.

Zimbra is a pain to install, but looks very exchange like, you basic impa, webmail, calendar and keyboard interactions. 

Also, did you look at the options for squiremail it has some dynamic effects (DHTML) you can enable for some ajax like behavior.  Also, squirrelmail has a gazillion plugins which is what makes it so appealing to most people.
