If you are installing Red Hat 8, you probably want to use LVM +
software RAID.  Basically you just need to create a 100MB partition on
each disk.  Set the type to "software RAID".  Then hit the RAID
button, select the two partitions, and make that your /boot.  Next,
make another software RAID partition on the remaining space on each
disk and format it "physical volume".  Then hit the LVM button and
start creating logical volumes for your other filesystems.  Make them
whatever size you think you'll need...  It's trivial to resize them
later.

One important thing...  You can't seem to do LVM in the text install,
which is why I don't have screenshots and such to explain the
procedure...  The GUI installer won't start up in VMware.  :-/
